  • December Blog – Christmas Greetings from Foxholes Farm 2015

    As we move head on into winter its critical we take more care of our animals. Here at Foxholes Farm winter feed for our animals becomes more expensive and this winter is no exception.

    Our Ewes are ready to give birth and they need efficient supplements so that they’ll be ready to feed their young which is why feeding them the right food is very important. Our barns are set up ready for early lambing meaning more work whilst also adding an air of excitement to our farm over the coming weeks. We now have more cows than ever before, some are grazing on our luscious land whilst their young calves are all snuggled in their winter beds. When the sun finally sets on Christmas Eve and our doors close, there are still plenty of jobs to be done so that on Christmas day we can finally sit down and enjoy our Christmas as a family.

    Our farm shop is busier than ever with a new look and increased space helping to make life a little easier as our little farm shop seemed to be bursting at the seams. We now have more room to stock so much more seasonal fruit and vegetables such as stunning red cabbages, carrots, leeks, parsnips and juicy fruits all sourced as locally as possible, so stocking up on all your festive trimmings is even easier.

    Try our easy Foxholes Festive Roast Turkey Recipe

     

    Tasty moist and delicious for your festive feast!

    Cooking time approx. 2hrs 45mins plus (resting time 20-30 mins)

    Prep time 30-40 minutes

    Ingredients

    • 6kg bronze or white turkey
    • 450g streaky (smoked or non-smoked)
    • 170g of soft butter
    • 2 red onions peeled and sliced
    • 6 carrots halved
    • 1 whole garlic bulb ( cut in half)
    • 10g fresh sage leaves
    • 6 sprigs fresh rosemary
    • Salt
    • Pepper
    • 1litre water

    Method

    1. Pre-heat the oven to 210C gas mark 7
    2. Smother the turkey inside and out with the softened butter then season all over with salt and pepper.
    3. Take a large oven dish or tray and arrange the onions, carrots, sage leaves and rosemary at the bottom of the dish. Add the garlic bulb halves around the dish.
    4. Place the seasoned turkey on top of the vegetables then add the water to the dish.
    5. Place the streaky bacon all over the turkey, especially the breast of the meat to keep moist.
    6. Cover the tray completely with foil and cook for 45 minutes. This allows the turkey to steam.
    7. After 45 minutes turn the oven down to 170c gas mark 3 and cook for a further 2 hours.
    8. For the last half hour of cooking remove the foil from the turkey and peel off the bacon. Turn up the oven to 200C gas mark 6 and roast until golden brown.
    9. Once the turkey is brown, take out of the oven cover with foil and leave to rest for 20-30 minutes.
    10. Carve, serve and enjoy!

    After the success of our stunning wreath making workshops, new to the farm this year are our butchery courses. The butchery classes run from January to April where you’ll learn tricks of the trade with our friendly team of butchers. The “Whole Hog” features hands on back to basics instruction whilst learning about the various cuts of meat and animal rearing, you even get to take home the pork you have worked with.
