Delicious Chocolate Muffins made with Hillfarm Rapeseed Oil.
Chocolate chip muffins
Makes 12 (approx)
- 2 eggs
- 250ml milk
- 125ml Hillfarm Rapeseed Oil
- 100g caster sugar
- 100g brown sugar
- 2tsp vanilla extract
- 25g cocoa powder
- 4tsp baking flour
- 1tsp
- bicarbonate soda
- 200g chocolate chips
Method
Pre-heat the oven to 200C. Place the eggs, rapseed oil, vanilla extract, sugars and milk into a large mixing bowl and beat together. Sieve the baking powder, bicarbonate soda, cocoa powder and flour into the rapeseed oil mixture. Add 150g of the chocolate chips and mix until just blended. Line a muffin tray with muffin case and fill each case to just below the top with muffin mixture. Then sprinkle the remaining chocolate chips over the top of the muffins and place in the oven for 20 minutes or until firm to the touch.
