Over the past few months we have been trying out some new flavours for our sausages. All our sausages are hand made in the butchery on site. The mixes are carefully weighed, hand chopped and hand mixed, this is a labour intensive method but achieves a perfect consistency. The mixture is then placed into the sausage filler, we use natural sausage casings as should be. The sausages are then hand - linked to give you that unique individual shape. This is a dying art, but one which we wish to keep to in order to give you, our customers the satisfaction that our sausages are only available here for you to puchase and ask questions about the ingredients. Flavours now available include:- Pork Leek Stilton Garlic and Mushroom Wholegrain Mustard Black Pudding Cracked Black Pepper Lincolnshire (herby) Fresh Orange and Country Herb Caromelised Onion Sun-Dried Tomato Traditional.  Ask our Butcher John our resident butcher is on hand from 8am to 5pm to help you with all the cuts off meat you may require. Please feel free to ask him about particular cuts and cooking instructions, he will also be ableThe majority of the beef will be home grown, but at times a small percentage will be sourced from local beef farmers with the same quality as foxholes beef). As usual our beef is hung on the bone for three weeks to mature and ad flavour and tenderness. Local lamb and pork will be on offer and seasonal local game. Wild Boar and Ostritch may be available in our frozen meat section. John will be producing some special hand linked sausages in a variety of flavours and hand pressing beef, lamb and pork burgers. You will be able to purchase foxholes home made bacon and gammon. All our English cheeses are sourced and ripened by a small Hertfordshire cheese company.
When they are supplied to us they are in ripe condition ready to eat. We have a selection of cow, goat and ewe cheeses. Please ask a member off staff to help you make your decision and cut to your requirements. |

Have you tried our popular home made individual pies. We have seasonal pies along with our monst popular varieties. These include:- Chicken and Asparagus, Local Game, Steak and Kidney, Chicken and Bacon. Also in the pastries we have our home made quiches and tasty sausage rolls and cheese rolls. New over the past few months are our home cured meats. These include:- Salt Beef Pastrami Roasted Top Rump of Beef Roasted Turkey Slices We have also sourced English Salami, chilli, garlic, solway and venison, Please come along and try these, they make a lovely salad or starter for the summer months. |
